Quick and Healthy Meal Ideas for Bariatric Surgery Patients


Having the same meal almost every day can end up being very boring, but creating meal ideas can also be a little difficult. Here, we will make your life easier by giving you some ideas of quick and easy healthy meals that you can do at home.

 


  • Shrimp and Avocado Salad  
    Ingredients:
    - ¼ cup chopped red onion
    - 1 lime juice
    - 1 tbsp olive oil
    - ¼ tbsp pink salt and black pepper
    - ½ lb cooked and peeled shrimp, chopped
    - 1 medium tomato, diced
    - 1 medium avocado, diced
    - 1 tbsp chopped cilantro
    Directions:
    * In a small bowl, combine red onion, lime juice, olive oil, salt, and pepper. Set aside and let them marinate for around 5 minutes.
    * In a medium bowl, combine chopped shrimp, avocado, and tomato.
    * Combine all the ingredients together; add cilantro and stir everything.




  • Mini Egg Cupcakes
    Ingredients:
    - 6 eggs
    - ⅓ cup turkey ham, diced
    - 2 tbsp red onion, diced
    - 2 tbsp tomato, diced
    -¼ cup spinach
    - 2 tbsp mozzarella cheese, shredded
    - ½ tbsp salt and pepper
    Directions:
    * Preheat oven to 350 degrees Fahrenheit. Grease the 6 cups muffin pan.
    * In a medium bowl, combine the eggs, turkey ham, red onion, tomatoes, spinach, shredded cheese, and salt and pepper. Mix well.
    * Pour the egg mixture into the 6 prepared muffin cups.
    * Bake for 15 to 20 minutes.



  • Cucumber Tuna and Feta Cheese Bites
    Ingredients:
    - 1 cucumber
    - 2 ounces crumbled feta cheese
    - 1 can of unsalted tuna
    - ¼ tsp salt and pepper
    - 1 tbsp fresh parsley
    Directions:
    * Chop the cucumbers in small pieces lengthwise.
    * In a small bowl, combine the tuna, feta cheese, salt, and pepper. Mix well.
    * Scoop the mixture into the bites.

  • Strawberry and Greek Yogurt Muffins
    Ingredients:
    - 1 cup whole wheat flour
    - 1 tbsp baking powder
    - ½ tbsp salt
    - ½ cup brown sugar
    - 1 cup fat-free milk
    - 1 egg
    - ⅓ cup oil
    - ¼ cup greek yogurt
    - ½ cup strawberries, chopped
    Directions:
    * In a large bowl, combine the whole wheat flour, baking powder, salt, and sugar. Mix the ingredients.
    * In another bowl, combine the milk, egg, oil and greek yogurt. Mix the ingredients.
    * Add strawberries to the wet ingredients. Mix gently.
    * Grease a muffin pan.
    * Fill the muffin pan and add some strawberries on top if desired.
    * Bake in a preheated 400F oven for 20 to 25 minutes.
    * Get them out of the oven and enjoy.
